Peanut Butter and Banana Pancakes

1-2 ripe bananas
1/3 cup peanut butter
1 1/2 cup Bisquick
1 egg
1/2 cup skim
1/2 tsp vanilla extract

Mash bananas in bowl. Heat peanut butter in microwave 20 seconds to soften. Mix with bananas. Set aside. Mix egg and milk. Beat just to combine. Add Bisquick, mix well. Add vanilla. Combine with peanut butter and banana mixture, do not over mix! If batter is too thick add 1 Tbs at a time until the right consistency. Batter should not be runny! Allow mixture to sit 5 minutes. Cook on griddle or skillet. Enjoy with some maple syrup!

makes 8-10 (6 inch) pancakes

*freeze any leftovers in freezer bags for later.

Always make more than you need when cooking pancakes. Freeze the extras for quick already made breakfast. Pop them in the toaster or toaster oven and enjoy.

Blueberry Dream

1-1 1/2 pounds blueberries
1 large tub of fat free or lite cool whip
1 box Blackberry Fusion jello mix

Mix all together and refrigerate or freeze. Can be served frozen or chilled as a refreshing treat. If frozen, set out about 30 minutes before serving.

Hula Girl Cocktail

2 (6 oz) cans pineapple juice
2 (12 oz) cans guava nectar juice
1 1/2 cup club soda
1 cup Malibu Rum
1 bag frozen strawberries
4 cups of ice

Mix everything but the ice together in a pitcher. Serve over ice.

*makes about 8 servings

Mexicorn Dip

I make this dip all the time!!!! Easy, quick and yummy.

1 can mexicorn
1 pkg (8oz) shredded pepper jack cheese
1 pkg (8oz) shredded mozzarella
1 cup lite mayo

Mix it all together. Bake at 350 for 30 minutes. Serve with lime tortilla chips or Taco flavored Doritos.

* hard to find shredded pepper jack in most grocery stores, but they come in slices.

Donut Birthday cake

Good recipe, simple and yummy!

2 cups all-purpose flour
3/4 cup sugar
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 tsp. baking powder
1 tsp salt
2 eggs, beaten
3/4 milk
1 tsp vanilla extract
1 Tbsp shortening

Preheat oven to 325. Mix flour, sugar, nutmeg, cinnamon, baking powder and salt in a bowl. Add milk, eggs, vanilla extract and shortening to dry ingredients. Blend with mixer for 2 minutes on med-lo, just until incorporated well. Spray an 8 inch cake pan well. Fill pan 1/2 full. Bake for 20-25 minutes, just until center is done. Do not over bake. Spray mini donut pan well. Spoon remaining batter into quart ziploc bag. Close bag. Snip off one tip. Squeeze batter to fill pan. Bake at 325 for 10-12 minutes. Do not over bake.

Icing

1 cup confectioner's sugar
2 Tbsp hot water
1/2 tsp almond extract

Mix well with whisk. Pour over hot donuts. Enjoy warm or let cool.


**I actually iced half of the mini donuts with chocolate icing. Simply heat up a half cup of store bought chocolate icing in the microwave just until melted. Dip the mini donuts one at a time to cover entire donut. Then stack them on top of the 8 inch cake and place birthday candles in the holes. Everyone loved it!


Serve warm!!! Enjoy!
